Finally A Date Night

My wife and I never get to have a date night. It has been really hard to schedule one. We are usually decide last minute to have a date night and find it hard to find a sitter. So we don’t get to go out together very much.

When we do get to go out we often find ourselves at one of our favorite little secrets in Charlotte. That is this little place in the Metropolitan area called Dressler’s. Now it is on the pricey side but they usually have a Groupon out there to purchase. The Groupon is dinner for two for $69, which includes two appetizers, a salad to share, two main courses, and a desert to share. It is a lot of food but the food is what makes the trip.

One of my favorite items on the menu is the blackened ribeye. It is so good with the blue cheese butter and the side of fingerling potatoes and asparagus really complment the dish. I know this is not a restaurant review but you have to try it.

I love spending time with this girl. She is so funny and I smile when she talks. I just love it when she talks. We had some drinks before dinner and just sat and relaxed with no kids grabbing our legs and saying “Mommy”, “Daddy”. It was very refreshing to just sit with your spouse and have a real conversation about something other then nap schedules and diaper rashes.

Our dinner was so good and the conversation was uplifting. This was short lived when we got a call from our sitter to say that the dogs got a hold of the trashcan with dirty diapers in it and the whole house smelled like crap. Straight up crap. So we headed home and cleaned it up. It was a not so good end to a great night but at least I got alone time with my bride.

Whats New With The Funderburkes

Its been a while since my last entry. The family is getting ready to head to Disney soon and we have been swamped trying to get last minute details made. Last night we finally got our magicbands for our trip. it was like I got the golden ticket to Willy Wonka’s chocolate factory.

I just wanted to write a post and give a quick update as I have been away yet again from the blogosphere.  I will talk more about Disney later.

Like I said on my last blog entry, I signed up for a 21 Dad Bod Challenge. I just finished this past week and I have to say it was just what I need to do. I was in a funk with my fitness and nutrition. I was just going through the motions during my workout and not really getting anything out of it. My nutrition was horrible and I ended up gaining 20 pounds back. Not the best news.

So I enrolled in this challenge to shake things up and get me back on track. The first week I went from a starting weight of 251 pounds to 240 pounds. This was a result of eating nothing but meat, veggies, and nuts and drinking water. The second week we added 100 grams of carbs to the mix. The third and final week we increased our healthy fats to 90% which was crazy. I went from 251 pounds to 234 pounds. It was insane. I learned so much about how food influences my body and that I need to find a health balance with my carb intake.

W managed to take K-Dub to the circus to see the last show form Ringling Brothers. It was so much fun and K-Dub got to be spoiled by Mom and Dad so she like that. She had a great time but kept questioning me on why there was not any elephants.

On Valentine’s Day I took BrittWhitFun on a night out to our favorite restaurant in South Park. We had a nice time talking over a bottle of wine and stuffing our face with some great pasta. It was nice to get away with the wife and not have to take someone to the bathroom every five minutes.

As for the kids, K-Dub is going to start playing soccer soon. So I was trying to teach her how to play and the importance of her keeping her hands off the ball but she is four and not Mia Hamm. Super excited to become a soccer dad cheer on my girl.

Everly has not been doing so well. She has been battling with her 7th ear infection in less then five months so we are going to see a specialist soon about putting tubes in her ear. Not going to be a fun visit but it is very much needed.

Ok lets talk about Disney!

So we are fixing to head to Disney in less then three weeks. I am so excited it has been hard to go to work. My wife actually told me to stop talking about cause I was becoming obsessed, I have spent A LOT of time planning fun things to do for us, picking out some restaurants I want to eat at, some shops I want to visit, fun things for the kids to do, somethings for the adults to do. There are so many things at Disney World that it has become a little bit overwhelming.

There are nine of us going. Half of us are staying at Port Orleans- Riverside and the others are staying at Arts of Animation Resort. If anyone has any suggestions or tips regarding these resorts please let me know.

We are doing the Deluxe Dining plan based on a suggestion from my BIL. We managed to make reservations to all the good restaurants like Chef Mickeys, Cinderella’s Royal Table, Tusker House, Coral Reef Restaurant, and even Be Our Guest. If you have any menu suggestions or other tips and tricks about the dining plan please let me know also.

All and all we are super excited. We have already begun packing for this trip. Everyday we are going down the list with things to bring. Like above, if anyone has any Disney tips please share them with me as I have never been. I need to know the dos and don’ts.

Meal Prep Wednesday, A Run, And A Monsoon

IMG_3155So today ended very crazy for me. I have never been more on the go then I was tonight. I really did experience the whole “not enough hours in a day” tonight as I scambled to get some many things done in so little time.

I left work today to with every intention to go run by the hospital to see mom before heading home. Well the weather has other plans. Not only did it pour down rain, but it was windy also so my umbrella could not save me as I got pelted with rain from all sides.

I actually ended up taking an Uber back to my car that was parked a half mile from the building. This was my first Uber ride and it was pretty cool to be on the other side of it. By the time I got to my truck to take me home, I was soaked from head to toe. So I dedcided to skip the hospital and head on home.

When I got home I played with my oldest daughter and ate dinner quick. i knew I had some solid meal prepping to do and I needed to hurry. This week I wanted to do something different cause I was getting burnt out on broccoli and brown rice. I spent a couple of weeks looking at other people’s meal preps on Instagram. I decided to try red cabbage instead of broccoli and use avocado instead of brown rice.

So this weeks protein was taco chicken, ranch turkey burgers, and Montreal seasoned STEAK!!!

I am actually really excited about this weeks meal prep. I love trying new dishes.

After meal prepping, I still had one thing left to do and that was RUN! I missed crossfit this morning cause I wanted to help my wife with the kids and I was hurting from the Extra Filthy workout. I managed to kill 3.50 miles in under 32:00 minutes. I got that Greek Festival 5k next week and I need to keep my legs warmed up.

Meal Prep Monday- Snacks

I have always wanted to post a blog entry about the famous hash tag #MealPrepMonday but I have never gotten around to it. So I figured there is no time like the present.

I have recently discovered  the greatness that is Youtube and I have been using to find ideas for my meal prepping needs. I have shared videos from the channel Fit Couple Cooks before and I have to say that these videos have changed the way I meal prep. They make it look so easy and I love how good the recipes are and how informed they are about questions from the audience.

My favorite thing to do in this world other than coupon, run , and be an amazing father is snacking. I love to snack and when I decided to try meal prepping I always wondered how I was going to make it from meal to meal or when I have those long meetings.

Needless to say Fit Couple Cooks must have heard my cry and made the video below.

I can’t wait to make those bar.

What is on your  meal prep menu?

Zucchini Lasagna 


I know I said I was done for this week but my Facebook and Instagarn friends are asking me for this recipe as my family had this for dinner. 

I have really been into healthy eating  lately (I know that is a shock!). So I have recently came across this app called fit men cook. How come no one has told me about this amazing app? 

I came across this recipe and I was excited and curious to see how this would taste. I love lasagna but I never had it with zucchini as the noodles. 

One of the things I was not excited about was the cottage cheese taking the place of the ricotta. I HATE cottage cheese! I do know that it has tons and tons of protien which is what I love! So I bought some to see if it made a difference. 

Once we took it out of the oven and put it in to a plate, I took a bite and WOW! This was amazing! You would never know there was cottage cheese in this. I looked at my wife and we both agree that this will be in the next meal prep! 

Zucchini Lasagna 

  • 1lb of ground turkey
  • 1 1/2 cups of low sodium marinara 
  • 1 zucchini 
  • 1 egg white
  • 2/3 onion
  • 1 tbsp garlic paste( I used minced garlic)
  • 1/4 cup of mozzarella reduced fat cheese
  • Coconut or olive oil spray
  • Seasonings- cumin, garlic powder, & onion powder for ground turkey. 

Directions

  1. Spray pan with oil and add garlic and onion and cook until onion is translucent. 
  2. Add turkey and seasonings and cook. Add marinara at 90% of cooking turkey. 
  3. Cut zucchini into pieces
  4. Mix cottage cheese with egg white
  5. In a glass pan layer with zucchini, then meat mixture, then cottage cheese, then zucchini, then meat mixture. 
  6. Top with mozzarella 
  7. Bake on 350 for 30 minutes. 
  8. Enjoy! 

Makes 6 servings- 1 serving

Meal Prep Is The New Way Of Life

Well I have to say that I am on a mission and that is to be lean. How lean? Lean enough to where I can get rid of those crazy love handles.  I have come to the conclusion that I may never have six pack abs and I am ok with that. What I want is to be healthy by any means I see fit.

I never thought that this blog would be mainly a fitness blog. When I started to blog a  few years ago, I never thought that a few years later I would be writing about fitness and living a healthy lifestyle. I just find it amazing how life’s twist and turns lead to a better you. On that twisted road I found how to meal prep.

When I was approached with the idea of making my entire meals for the week in one day, I thought it was crazy. I mean how are you suppose to do that? Is it expensive? How much time was it going to take? Will the food spoil? These were just a few of the many questions that were going through my head.

Like anything I do in my life, I researched the hell out of it. What kind of meals to make, the best meals to make, the easiest meals to make were all burning questions that I needed answered. I found this great little website call Youtube, where people like me were making videos on how to meal prep. After hours of watching these people cook I decided to give it a try.

#1 I had to decide what meals I was going to make.
I decided go with this meal below as my alternate meal. I have another one listed below. 

For breakfast, I got a great egg white muffin recipe from one of my crossfit friends. Here is a recipe that is almost just like it.

I love to snack and I love something sweet after good healthy dinner. It takes everything I have not to go on a massive Oreo bendeR, SO I found a recipe for some amazing protein energy bites that are out of this world. Click here to get that.

#2 Grocery Shopping

I am cheap when it comes to buying groceries  I mean look at the name of this blog. It’s called The Thrifty Running Dad for a reason!  I have had a lot of people tell me that eating healthy is expensive, which is why so many people don’t do it. Are they right? NO! 

Healthy food is way easier to get then the other kind. The trick is to know where to look. I am a huge fan of Harris Teeter. My local Harris Teeter knows me by name when I walk in with my blue coupon binder on my shoulder. They know that this guy means business and he is about to rob them blind. Even my fellow ear crossfit peeps know I will skip a WOD if that mean saving big. It’s a skill and a rush at the same time. Couponing is better then sex. True story. Anyways, I recently discovered a new store to save big on some expensive items and that is Aldi. Where has this store been all my life? Surfing my most recent trip I manage to walk out with a buggie full of stuff and I only spent $40. Here are some things I found:

1. Ground turkey -$3.29 a pack ($5.99 at Harris Teeter)

2. Chia seeds- $3.99 a pack

3. Flaxseed- $2.49

4. Almond butter- $4.99

5. Coconut oil- $4.99

If you ever shopped anywhere else but Aldi you know these are the most expensive health foods out there. 

So all and all I managed to score two weeks of meal prep food for $100, which is exactly what my budget for food every two weeks! 

#3 Get the right equipment  

It’s hard to meal prep when you don’t have everything you need. For example, containers to put the food in 😊. So I found these great containers on Amazon for around $10. You get seven complete with a lid and they are on Prime so you get the two shipping. Well worth the price. Check them out here.

Now I was ready to start cooking. This past week made turkey burgers, brown rice and broccoli. Here is how it went. 

TURKEY BURGERS

2 packs of ground turkey

1 cup of diced jalapeños (Save time and buy the jar)

4 tablespoons of minced garlic

Salt and pepper to taste. 

I measure my patties with a 1/3 measuring cup and then I push down to make a 90 gram patty. When I did this I got 12 patties out of the two packs of ground turkey. Melt 2 tablespoons of coconut oil in a pan on medium heat. Once hot place your burgers on the pan and cook each side for about 3:30 minutes. This recipe was given to me by my two good friends Kristy and Brian Helms. Best burgers you will ever have! 

BROWN RICE

2 cups of brown rice

3 1/2 cup of water

1 tablespoon of coconut oil

Put rice in the pot along with the water and coconut oil and cover and bring to a boil. Once at a boil, stir the rice and cover and let it cook until all the water has been cooked out. I usually add an additional 3 to 4 cups cause I like my rice extra soft. I usually measure about 100 grams of rice per meal which is a little under 1 cup. 

BROCCOLI 

2 or 3 broccoli crowns

Cut the florets off the crowns and throw them in a pot of water. Cover and cook until the broccoli is tender. Drain water and place back in pot. Add a tablespoon of coconut oil and let it melt. Once melted toss broccoli around. 



There you have it. Meal prep is easy. After prepping my breakfast and lunches and snacks. I can say that it only took me about two hours to complete it. Well worth it to not have to fiddle around in the mornings to find something to eat.

Mexican Pie In The Sky!

 

So I got home from work the other day and like always, I had to come up with something for dinner. I knew two things:

1. I was about to eat my hand off!
2. I wanted Mexican food but not tacos.

I have not had a chance lately to make some good Mexican food cause it happens to be the one thing that makes my pregnant wife sick. She had a bad pregnancy experience with taco meat that should never be repeated. The very smell of it makes her sick. Kind of the way I am with the smell and sight of bananas. Yes I have a general fear and hatred of bananas. Don’t even get me started about when they are dancing in sleepware.

When you become a parent, you do anything and everything to “win” when it comes to the general well-being of your child. My constant fight as a parent is to make a dish that my kid does not take one bite out of and immediately spit back out on her plate. It really is a daily struggle cause my kid only knows of three food groups which are chicken, fries, and pizza. Anytime you try to introduce anything new, dinnertime can turn into WW3.

So after looking in my pantry, I found a couple of things. A can of retried beans, some ready to heat rice, and some taco seasoning. I decided to experiment and go a little crazy. I decided to make a Mexican Pie or that is what I am going to call it. The recipe is as follows:

Ingredients

1 can of retried beans
2 bags of Mexican blend cheese
2 pouches of heat and serve Spanish rice
1 lb of ground turkey or beef
1 pack of taco seasoning
2 cups of crushed tortilla chips

Directions– Preheat the oven to 350

1. In a deep casserole dish, spread the whole can of retried beans on the bottom. Then top with a bag of cheese.
2. Heat rice and add-on top of cheese.
3. Prepare your turkey meat with taco seasoning and add layer on top of rice.
4. Sprinkle half a bag of cheese on the meat and then top with tortilla chips. Add remaining cheese on top.
5. Bake for 5 to 10 minutes or until cheese is melted.

When serving I topped mine with some sour cream, salsa, and hot sauce.

I wish I had more stuff to add. This would be perfect with some peppers on top or with a layer of lettuce. Maybe next time.

After I pulled this out of the oven the real critic was my daughter. She took one bite and loved it. Before I knew it she had eaten the entire bowl I prepared for her. This was a very good and easy meal and I am currently on the lookout for some quick meals cause of my family’s crazy scheduled. If you try this recipe please let me know how you like it.
