So today ended very crazy for me. I have never been more on the go then I was tonight. I really did experience the whole “not enough hours in a day” tonight as I scambled to get some many things done in so little time.
I left work today to with every intention to go run by the hospital to see mom before heading home. Well the weather has other plans. Not only did it pour down rain, but it was windy also so my umbrella could not save me as I got pelted with rain from all sides.
I actually ended up taking an Uber back to my car that was parked a half mile from the building. This was my first Uber ride and it was pretty cool to be on the other side of it. By the time I got to my truck to take me home, I was soaked from head to toe. So I dedcided to skip the hospital and head on home.
When I got home I played with my oldest daughter and ate dinner quick. i knew I had some solid meal prepping to do and I needed to hurry. This week I wanted to do something different cause I was getting burnt out on broccoli and brown rice. I spent a couple of weeks looking at other people’s meal preps on Instagram. I decided to try red cabbage instead of broccoli and use avocado instead of brown rice.
So this weeks protein was taco chicken, ranch turkey burgers, and Montreal seasoned STEAK!!!
This weeks veggies were red cabbage and broccoli and this weeks starches and healthy fats were avocados and brown rice.
I am actually really excited about this weeks meal prep. I love trying new dishes.
After meal prepping, I still had one thing left to do and that was RUN! I missed crossfit this morning cause I wanted to help my wife with the kids and I was hurting from the Extra Filthy workout. I managed to kill 3.50 miles in under 32:00 minutes. I got that Greek Festival 5k next week and I need to keep my legs warmed up.

I just love making this dish. I know it has been a while since I posted a new recipe but I wanted to share this with everyone. I learned how to make this at work actually. I saw one of the people in our cafeteria make this and I thought I could. I have changed the recipe overtime to make it more personal but you can add what ever you want in it. I have some suggestions I will put at the end.
2 Cans of alfredo sauce
1 Tablespoon of minced garlic
1/4 Cup of olive oil
1 Cup of broccoli florets
1 Cup of diced onion
1 Box of bow tie pasta
2 Boneless Chicken Breasts.
1/2 Cup of Feta cheese
1/2 Cup of Parmesan cheese
1. Start cooking your pasta as directed on the box
2. In a large sauce pan add olive oil and minced garlic on medium heat until the garlic starts to sizzle.
3. Add onion, broccoli, and chicken and stir fry until crisp and cooked (might want to cook chicken first and then add veggies).
4. Add both cans of alfredo sauce and let simmer
5 You can add both feta cheese and parmesan cheese for added flavor.
6. Combined pasta with mixture and let simmer for up to 3 minutes.
7. Serve with extra parmesan cheese! Enjoy!
You can add more veggies like mushrooms, carrots, olives, green peppers, and squash if you would like. I also like to add a spoonful of pesto to mine for an added kick. I hope you like it. It’s the most flexible recipe I have.
I am always on the go and sometimes I need something that I can just cook and clean up real quick. As you can probley tell I love anything that is hot and spicy. So one day on the way home from work I came up with an idea that I really wanted to try. I wanted to make a buffalo chicken pizza. So I ran to the store and got some ingrediants and headed to the house. I hope you like this recipe!
1 Package of take and bake pizza crust (I like the thin kind)
1/2 Cup of hot sauce
1 Package of Oscar Mayer Buffalo Chicken Strips
1 Cup of shedded monteray jack and colby cheese
1/2 Cup of blue cheese crumbles
1/2 Chopped purple onion
On the pizza crust, pour hot sauce and spread it evenly on the crust. Top with cheeses, onion, and chicken. Put a few squirts of hot sauce on the top.
Bake on 425 for 14 to 17 minutes.
This given to me by my wife that she got from Pinterest. I love it and it is so easy to make. I hope you like it.
1/2 Cup of Parmesan Cheese
1 Cup of mayo
1 Teaspoon of garlic powder
1 1/2 teaspoon of seasoning salt
1/2 teaspoon of pepper
Mix ingredients in a bowl and dip your chicken in mixture until coated on both sides. Place on a baking sheet and pour extra mixture on chicken.
Bake on 375 for 30 to 45 minutes.
