Going Through The Holidays

It has been a while since my last post and a lot has happened. The holidays are full swing here at our house but lets catch up first.

Halloween was a lot of fun. I dressed us as Flynn Rider while K-Dub dressed like Rapunzel. Evie was Mickey Mouse and BrittWhitFun was a witch. Check out our pics.

No Halloween could be complete without some pumpkin carving and trunk or treating with the nephews.

Thanksgiving is and will always be my favorite holiday and this year was no exception. I made lunch for about 10 people and I made all the fixings. I made the turkey, Mac and cheese, green beans, stewed cabbage, mash potatoes, and rolls. I also made cake pops for the kids, a butterfinger cheesecake, and a apple pie. It was so good I spent the rest of the afternoon passed out on the couch.

Now we are at Christmas and our house is in the full Christmas spirt. The gifts are bought, tree is up, and the lights are shining outside.

Christmas Time

It has been a while since my last entry. Like we missed Thanksgiving but don’t worry I ate my fare share of turkey to write a whole blog full.

So today is Christmas Day or at least it is when I am writing this. This year was amazing. I am not usually the one jump on the Christmas bandwagon but this year was a little different. This year I found myself getting excited for my kids to open their gifts and for my wife to smile as she is filled with joy this time of year.

This year I want to do something special for my family. So for my girls i bought them a swing set and a Frozen Jeep Wrangler.  Although the construction of the swing set took all of Christmas Eve to build, I was able to get it done with a HUGE thanks from my brother in law, Spencer and friend Sara. It took up most of my Christmas Eve but we made it work.


Finally the big day came and my wife and I were more excited then our kids. We had to wake our oldest up. When they came down K-Dub went over to their Frozen Jeep Wrangler and hopped in. After almost crashing in to the couch, we decided to wait until daylight to take the Jeep outside. Soon it was time to open presents and my girls wasted no time. Wrapping paper flew through the air and screams of excitement roared through my living room.


When it came time to exchange gifts between my wife and I was beyond excited cause I knew there was some pretty cool stuff under that tree for her. First, I got her an Apple Watch cause I know she was wanting one, a diamond ring from the girls, a new straighter for her hair, and a stand up mirror. She was very surprised.


What my wife got me was one of the most thoughtful things she had ever done. She got me a “Best Dad Ever” mug, a new MacBook Pro for blogging, a wallet, and what I consider the most thoughtful gift she could have ever given me. As this was the first Christmas without my mom, which was hard but I managed to hide it very well. The last gift made me cry as I was full of emotion.


I think it is safe to say she knocked it out of the park in the gift category.

It was finally time to reveal the big surprise to our kids and I think they were very much surprised.

All and all I think Christmas was a success. My wife and I were exhausted by the end of the day and with a little help from a bottle of our favorite wine, we sleep so good.

Thanksgiving Blues

I have to say that every year around this time I get a little depressed. Don’t get me wrong, Christmas is great but there is just something about how the amazing holiday day known as Thanksgiving. Now that my turkey is all gone, stuffing is almost and there are no more pies I am a little sad. 

As usual, I made a great meal and managed to nearly burn the house down while trying to make a cheesecake. The cheesecake was great but the house smelled like smoke for a day and a half. I got so many compliments on my turkey this year. Even people who said they did not eat turkey. That is always a great takeaway from thanksgiving. That’s the kind of magic I am talking about. 

My sister in law and I tagged teamed it again. Both making out signature dishes. The only difference was this year she hosted it. It ended up being a blessing cause I was not stuck with the clean up. We gathered around and ate and watched the Carolina Panthers crush the Dallas Cowboys and claim their 11-0 victory. 

The next day I spent getting Christmas decorations down from the attic and heading down to our local Christmas tree lot. It always makes me sick to my stomach at how fast we hurry to Christmas. It’s like thanksgiving does not matter at all.  


Now that my tree is up, gifts are bought and I am rocking my almost two month old to sleep I can say that this holiday season I am going to make it my mission to concentrate on being thankful rather then selfish. 


Our Christmas Blues And Birthday Wishes!


Well Christmas is finally over and I am a little sad, relieved, and overall exhausted. Christmas is so exciting. We always wait anxiously for the day. Then it is over in five minutes and you are left so tired that you wake up the next day with your knee killing you. Yes I am talking about my experience. I am sitting here at work about to fall asleep under my desk with a note on my computer that reads DON’T WAKE UP TIL JANUARY!

Christmas was a lot of fun. K-Dub got tons of toys. So much that Mom and I are going to be getting rid of a lot of her old stuff to prevent clutter. Yes that is mean but we don’t want every inch of our house covered in baby toys. Its bad enough that I stepped on one of K-Dub’s “little people” this morning and screamed out in pain. I already hate those things and hope that hell has a special place for them. K-Dub got so many things to ride on this year. I hope this does not prevent her from walking soon cause those will  be trashed too. K-Dub also got not one, not two, but three Minnie Mouse stuffed animals! To make it worse, they are all in different sizes. So now she has one for the car, one for her room, and one for the living room for me to kick out-of-the-way. The best gift K-Dub got was from Santa and that was dino that pops little plastic balls. Why is this the best gift ever? Cause it teaches her to clean up! You know that I love to clean up!

This year there was a central theme in all the gifts I got this year. Besides the amazing Duke Blue Devil tumblers I got, which are amazing and I am drinking out of one now. I got a lot of cooking stuff! I got some spring formed pans to make more killer cheesecakes like the recipe I posted yesterday. I also got some really amazing new stainless steel pots that are so nice and shiny that I almost do not want to cook with them. I guess that in 2013 I cooked so much that my family has decided that I should have some better stuff to do it with. You know you are a grown up when you get excited for some new pots.

After going to four Christmases in one day(Yes, just like the movie!), we returned home to unload all of our loot. I washed all my new kitchen stuff and we organized all of K-Dub’s stuff. By nine last night we were so tired. We went to bed and said goodnight to each other and past out. Then I heard my alarm to get up and ready to leave for work and I nearly cried. I hate alarms!

So now that Christmas is over with I am now looking forward to that other holiday that is important and no it is not New Years even though that is one holiday I wish every year I could remember. Its my birthday in two weeks!!! I am going to be the big 28! There is one thing that I really want and I would go crazy for if I ever got one and that is a Nike Fuelband! That is the top of my list! Heres hoping!!!


Nothing Like A Merry Christmas With A Butterfinger Cheesecake!

Hey guys! Merry Christmas to your family from ours. We have had a crazy Christmas morning here at the Funderburke house. K-Dub loved all of her gifts from Santa and Mommy and Daddy. Right now I am sitting in where? You guessed it! The kitchen! I am making a hash brown casserole for Christmas brunch with BrittWhitFun’s family. That’s not the only thing I have been cooking. I also made a Butterfinger Cheesecake that is out of this world. I could not just make something this awesome without sharing it with you guys. So consider this a Christmas gift from me to you. Trust me when I say you won’t want to return it.


5 to 6 packages of 8oz cream cheese sat out at room temp to soften
1 cup of sugar
2 tbsp of flour
3 Butterfinger bars crushed up
1 8 oz sour cream
3 eggs
1 tbsp of vanilla extract
1/3 cup of peanut butter

Crust Ingredients

1 package of vanilla wafers
3 tbsp of sugar
1 stick of melted butter


1. Preheat oven to 325
2. Crush vanilla wafers and add sugar and butter.
3. Put in a spring formed pan that has been greased and spread along the bottom and sides of the pan.
5. Bake in the oven for 10 to 12 minutes
6.In a separate bowl mix all of the ingredients. Make sure to add each egg separately for best results.
7. Pour mixture in pan and bake for 70 minutes
8. Sat out to cool and then put in refrigerator for 6 to 8 hours.
9. Before serving you can add additional Butterfinger crumbles on top for a little something extra.



Christmas Crazy And Other Crazy Stuff


Well we are one day away til Christmas and I am stuck in the office. Working Christmas Eve should be illegal. I have no room talk as Brittney is currently working also but she at least gets to only work half a day. Our poor nanny is having to work Christmas Eve also. Am I going to hell for making her work? I think she also likes to see K-Dub anyways so it works out. You can always tell Christmas is around the corner cause everyone starts to disappear as it gets closer to Santa’s arrival. I am sitting here at my desk and only three people are around me. Why am I even here? Oh, I know! I have a mortgage now!

Last night BrittWhitFun and I went out last night to finish our Christmas shopping. Last year we laughed at those people who were out fighting for the perfect last-minute gift. We were finished shopping on Black Friday. This year we put it off til the last-minute cause we are just that dumb. We went to Target and it was a mad house but we ended up finishing all of our shopping. All of Santa’s gifts are ready to be constructed tonight so K-Dub can play with them first thing in the morning.

Tonight I am going to hang with the in laws and open gifts. I made an amazing Butterfnger Cheesecake last night. I will be sure to post the recipe for you guys as a Christmas present. Its going to be amazing. I hope you guys have a great holiday and be safe.

Needed A Christmas Break

Sorry that it seems like this week I have dropped off the face of the earth cause in a way I did. I was dealing with some pretty serious life stuff this week that needed my whole attention. Sorry friends but I promise to get back to my usual blogging madness next week if Christmas does not kill me first. Still trying to figure out how to pull a miracle out of my ass. It’s a lot harder to do then it sounds. So please don’t worry my loyal readers cause next week I will be back and ready to share some crazy stories. The Coldest Christmas Gift Ever

Well this year my brother gave my dad and I our Christmas gift really early. I knew it was going to be tickets for something I just had no idea what to. To my surprise, he gave Dad and I tickets to the Panthers vs. Jets game. I am a huge Panther fan and I try to at least go to one game a season if it is possible. This was a great gift and one that I would never forget.

What made this gift awesome was the fact that I got to spend some time with my dad who is like my best friend. We have so much in common and I have always found it easy to talk to him about anything. We sat up in the stands and cheered on Cam Newton as he threw completed passes and yelled at the referees for their dumb calls. It was so much fun. Also, our team won, which is always an added bonus.

The only thing that was bad was that going to a football game in December sucks cause it was so cold. The more the sun went down the colder it got. I had to put my hands in a foam finger to keep them semi warm. It also did not help that we had to walk to and from the train. Next time I will have to be a little smarter and bring gloves. I was at least smart enough to bring a cap but not smart enough to keep up with it. I lost it before we even got on the train. I hope the person who found it at the local Hooters enjoys it.


The Real Stars Of The Family Christmas Party

This past Saturday we had our annual family Christmas Party. This was the first year we had it at a different place. I look forward to this gathering every year cause its a chance to catch up with old family members that you never hear from. That and the ones you wish you could trade. Just kidding!

This year was set to be the first one that K-Dub got to go (I guess you could count last year with her being inside the womb) and she had a really great time. When we first got their she was very shy and would not let go of my shirt. After about 20 minutes of everyone gathering around to say how cute she was, she felt right at home and started to put on a show. She would crawl around on her knees and make noises, while everyone cheered her on. Everyone kept commenting on how the video of her licking the refrigerator was so funny. I would then tell them that K-Dub tried to eat our Christmas tree before we came over and that I was not worried cause she was getting lots of fiber. Yea I really think something is wrong with my kid but I love her.

Then her cousins came in  the house and then it was a real party. Charlee Bell and Hayden and K-Dub had everyone rolling. I wish I had some of Charlee’s energy for a day. K-Dub was having so much fun that she forgot about her usual sleep schedule at 7. It was that she was either having so much fun or the fact that my brother was letting her drink coke(There will be revenge!).

So after having the most awkward family photo made of us ever (See below), we but K-Dub in the car and before we made it out of the neighborhood she was out like a light. This made getting her to bed a lot easier.

I love family Christmas parties. Not only are they a great way to catch up with family, but they are also a great chance to let your kids make tire themselves out! WIN!

Let The Christmas Rush Begain!


This weekend we ate what was left of the turkey and started getting ready for the wonderful(and stressful) holiday known as Christmas. Like Thanksgiving, my wife and I are trying to make it the best we can for K-Dub. We are doing everything from the gifts to the visit to see Santa.

Don’t get me wrong. I am still very aware of the fact that this is her first Christmas and she will not remember it but BrittWhitFun and I will. Since we are trying so hard to make this the best Christmas for her, we decided to take her to meet Santa for the first time.

We heard that the local Bass Pro Shop was giving away free Santa pictures. At first I was very reluctant to have my daughter’s picture taken at Bass Pro Shop cause its the last place I expected for Santa to be, but I know a good deal when I see one. I always love things that are free! Who doesn’t?

After waiting in line for almost an hour, we reached Santa. I was worried that K-Dub was going to freak out over letting an old stranger hold her. She is very clingy to BrittWhitFun and I so I did not know how she was going to react. Lucky for us my sister-in-law, brother-in-law and nephew came with us. Once K-Dub and my nephew HJ sat on Santa’s lap they were fine. In fact, they looked like pros.

Also this weekend, we got our tree up and decorated. No, we did not steal our Christmas tree this year. I just had to make that perfectly clear. I did not want to feel guilty this holiday season. Now the only thing left to do is the outside lights. I need to do those soon cause my weekends in December are full of parties and other Christmas activities. Nothing says Merry Christmas like a full calendar.
